Champ d’Orphée
IGP Cotes De Tarn, Gaillac, France

Stéphane Lucas farms a tiny .77 hectares farm that produces only two cuvées, though he does vinify grapes for some of his neighbours. The only grape Lucas grows is the local red grape Braucol, also known as Fer Servadou. It is an old variety, references going back to 1780s. It does well on poor soils and planted in many regions of southern France, often yielding a tannic and rustic almost Cabernet Franc-like wine.

Deeply committed to farming organically, though not certified, as well as employing biodynamic treatments. He has even begun experimenting with natural products such as essential oils and algae. All herbicides and pesticides are avoided, with all vineyard and soil work being done by hand or with a small tractor. Legumes and grains are planted between the rows each fall after harvest to aid soil health and protect against erosion.  As of now, Stéphane refuses the Gaillac AOC, deeming their regulations as being too loose in regards to yields and organic farming. He and a few other top vignerons in the region are pushing for the laws to change, but until then he bottles everything as IGP des Côtes du Tarn.

Domaine de la Combe 
Loire Valley, France

Domaine de la Combe is based in Saint-Fiâcre, south-east of Nantes, right at the point where the mouth of the Loire River meets the Atlantic.  The estate was established in the 1950’s and sits on what is considered one of the best sites for producing Muscadet Sèvre et Maine.  Here the soils are layered with orthogneiss, a cracked, mineral-rich rock and flint, through which the vine roots weave and nourish the vines.  Made traditionally at this small estate, the Melon de Bourgogne grapes were hand-picked, lightly pressed to retain their delicacy and purity of flavour, and fermented at cool temperatures to preserve their aromas.  The wine was left on its fine lees until the following spring to add complexity and extra richness.

Muscadet Sèvre et Maine
100% Melon de Bourgogne

Crisp, flinty notes with a hint of yeasty lees on the nose.  The palate has a lean acidity with a slight spritz and flavours of crisp green apple, combined with some savoury yet citrusy notes and a pleasingly yeasty finish. 

This is a wine which cries out for shellfish on ice, but would also work well with almost any grilled fish.
